This is because more than 90% of Italian restaurants really do not pass as genuine. So you are probably eating at those American-Italian restaurants that may serve Italian dishes but taste otherwise. You have been eating so many Americanized Italian dishes that you do not really know how Italian spghetti really tastes like. But once you know what Italian cusine really is, it won't be hard at all for you to start busting those American-Italian restaurants.
You will have to take note of the flavor first. Italian cooking can be summarized into one word: simple. You won't find any Italian dish that just bursts with strong flavors. The American style of cooking is just too strong with too much spices and additives added to the dishes. But you should know that Italian cuisine is striking the right balance between flavor and restraint. You may taste dishes that have this significant boldness but they are not overpowering you. Italian love to let the natural flavor of the ingredients just show through the entire dish and not hide them with different spices. The pasta sauce is always a great gauge of whether you are in a real Italian restaurant or not. For example when you order a dish like spaghettini ai frutti di mare, do you taste more of the the pasta sauce than the seafood? If so, you must be in the wrong place. Pasta sauces in Italian dishes are not there to mask the flavor of the pasta or the other components like in this case the mixed seafood. The next thing you should take note is whether the pasta sauce sticks to the pasta, if so you are eating homemade pasta. Homemade fresh pasta adheres to sauces, unlike the dried kind that makes the sauce slip. Homemade fresh pasta is also a lot lighter, so you dont get that heavy, bloated feeling after eating an entire bowl of fettucine alla primavera of handmade ribbons in vegetable cream sauce.
Getting oriented with the menu means that you should also know what a real Italian dessert tastes like. Italians are famed for mixing in different fruit zests and peels in their cakes and pastries. They may even add some fruit liquor in their desserts yet the taste will still be particularly light. The reason for the lightness is because Italians are not fans of adding to much sweeteners. You can't hardly find an Italian recipe that requires heavy cream or margarine. Like their savory counterparts, Italian desserts show the flavors of the ingredients and not just simple sweetening thing up.
